Black bean nachos for dinner

Some days when I get home from work, I am tired and hungry and don’t feel like cooking a real meal.

I have a couple of quick and easy go-to recipes that make for healthy and filling meals and/or snacks.

Here’s one that I whipped up for dinner tonight. It takes less than 10 minutes to make.

Black bean nachos

1 can black beans – I use the no-salt kind

2 tablespoons chopped onion

1/4 cup chopped cilantro

1 small tomato, diced

1 avocado, sliced

1 teaspoon lime juice

1/2 teaspoon Tajin

1/4 teaspoon chili powder

1/4 teaspoon garlic powder

tortilla chips

Drain beans. Stir in Tajin, chili powder, garlic powder and all but 1 tablespoon of the chopped cilantro. Heat for 30-45 seconds in the microwave.

Top with the onion and remaining cilantro. Add slices of avocado and tomato. Splash lime juice over everything.

Serve with tortilla chips.
